F.A.Q.
About Matcha
What does "ceremonial grade" matcha actually mean?
"Ceremonial grade" originated as a Western commercial marketing term rather than a regulated Japanese agricultural grading.
In practice, it helps buyers filter out bitter culinary grades meant solely for baking (mix with heavy cream and sugar).
Authentic ceremonial matcha is crafted exclusively from shade-grown, stone-ground, first-harvest spring leaves. It possesses natural umami, balanced sweetness, and zero harsh bitterness, allowing it to be enjoyed straight with water as thin tea (usucha) or thick ceremonial paste (koicha) without needing milk or sugar.
What is the best milk to use for a matcha latte?
The best milk depends on whether you prefer a balanced profile or a rich milky texture:
- Oat Milk & Macadamia Milk (Recommended): These provide a balanced fat content that complements the sweet umami of matcha without overpowering delicate top notes or causing a heavy sensation.
- Whole Dairy Milk & Coconut Milk: These have higher fat densities that create a decadent, velvety mouthfeel, but they can mute subtle matcha cultivars unless paired with a bold, barista-grade roast.
How much caffeine in matcha compared to coffee?
A standard serving of matcha uses 1 to 2 grams of whole stone-ground leaf, delivering roughly 35 to 70 mg of caffeine. A single espresso shot uses 12 to 18 grams of ground coffee beans and delivers 65 to 85 mg of caffeine.
Because matcha contains high levels of the amino acid L-theanine, caffeine absorption is sustained steadily over 4 to 6 hours, delivering focused mental alertness without coffee's abrupt adrenaline spikes or afternoon crashes.
Is matcha originally from Japan or China?
While modern matcha culture were perfected in Japan, the historical method of whipping powdered green tea originated in China during the Tang and Song Dynasties.
It was introduced to Japan in 1191 by the Buddhist monk Eisai.
Japan refined the cultivar selection, shading method, and formal tea ceremony (chanoyu), turning it into the distinct single-origin green tea ritual known today.
