]]>Before I started Clarity Tea, me and our team challenged ourselves to find a black tea which can be enjoyed pure without adding anything. We think a good black tea should be flavourful but won’t have any side effects like overpowering bitterness and strong caffeine kicks.
Black tea is full oxidized tea which creates the bold and full body flavour. However, the black tea from different countries all have their characters, just like other gourmet ingredients. The style of Taiwan tea is to show the natural taste through pure craftsmanship of tea making, not blending. So most of the tea makers use a single tea variety to make unflavoured black tea.

I found my favorite tea maker through my tea mentor over a casual tea tasting session in April 2020. After a phone call, we soon drove into the mountains to visit him the next day. We are very lucky to meet Mr LIU because he usually spends 6-8 months in China teaching other tea makers.
Like any other tea makers we've visited, he's very enthusiast about his works. I call him an Aficionado of Taiwanese black tea.
After a very brief visit to his small but well functioning tea factory, I kept searching for other tea around that area. But I still went back to him because of his magically tasty black tea.
I kept visiting him for another month and learnt many tasting techniques from him. Finally, he showed me his secret after my fourth visit. It was a magical adventure.

In order to visit his secret tea garden, we changed from his Mercedes to an old four-by-four.
“Buckle up, and try not to scream,” he said. After a very bumpy 15-min drive (almost like a desert safari), we reached his full organic tea garden in Yu-Chi.
“I don’t normally visit this garden because we practice organic agriculture. It was difficult in the first 5 years, but now I only need to check it a few days in a month.”
His tea garden is one of the hidden gems that has been certified organic since 2016. “It was very difficult to find a clean tea garden in Taiwan because of the land size,” he said, “ even my father didn’t support me, I almost gave up.”

I could clearly see many tea plants weren’t that “perfectly in full size” because of the insect bites.
And there were many bugs and worms between bushes as well which is the direct proof of a biodiversity tea garden. There are many reasons for practicing organic agriculture, ‘Cha-Chi” (the taste and energy of tea) is one of the most important ones for Mr. Liu.
“You can directly feel a big difference when you drink my tea, it won’t give you headache or discomfort even if you drink it all day long.” He said that proudly.

We have a love-hate relationship with caffeine - we need it but we can't take it all day long (even though some of you'd love to). But for cold-infused tea (or cold brew tea), you can literally drink it for the whole day without caffeine jitters. Why?
Caffeine content will dissolve into your caffeinated beverages (tea & coffee) with a higher water temperature. And vice versa. Caffeine also means astringency (bitterness), that is also why we use low temperature ( below 89 degree) to brew green tea.
So if you are sensitive to caffeine but still want to drink tea, try cold-infused tea! You won't get much (nearly nothing) caffeine from it.
1. Choose a right infuser: fine mesh strainer or bio-degradable teabags
2. Use high quality tea leaf: The tastes will be smoother and sweeter. We've tested many types already. The taste of whole leaf tea is still the best.
3. Choice of tea: Green Tea, Roasted Oolong, High Mountain Green Oolong tea and White tea.
4. Fast cold-infused method:
-- Float the tea inside a bottle of fresh cold water ( about 1 Litter) for 30 mins, and transfer the whole bottle inside fridge to avoid germs and mold.
5. Time (depends on the form and types of tea)
-- Bulb-shape tea ( for example taiwanese style oolong): From 4 to 10 hours.
-- Stripe-shape tea ( for example Long-jing green): From 2 to 4 hours.
Like any other food, the spoilage process will also happen in tea when it's moist. We always suggest to take out the leaf after the first 10 hours, and finish the tea within 72 hours.
All the skincare lovers should know EGCG (Epigallocatechin Gallate) which is very famous for its antioxidant and anti-inflammatory power. But it is a chemical compound NOT ONLY in green tea but also other types of tea.
EGCG may help us reducing inflammatory issues from our liver to our skin. And it may also help us improving brain function and reactivating our immune system.
It is a type of antioxidant can be found in many natural food, especially in tea.

The fun fact of oolong tea is, it can look/ taste like green tea OR black tea, one big bonus if you want to change the flavour but still keep the health benefits.
But NOT ONLY green tea is the best because it’s unoxidized. Based on research papers in Japan and China, there are no huge differences between the testing groups who drink green tea and oolong tea, in terms of their health conditions. --- Healthy diet and lifestyle is still the key.
By definition, tea is made from camellia Sinensis (tea plants), the small green leaf buds. And it can be produced into different “types” of tea, like green, white, oolong and red (aka black tea).
This type of “tea” is rich in polyphenol, catechins, L-theanine (a type of antioxidant), flavonoid and caffeine. Others made from flowers or herbs are called Tissan (including Herbal tea). It normally doesn’t contain L-theanine, caffeine and catechins.
The first infusion is just the beginning of high mountain tea. The optimal nutrition level and tastes start from the second infusion. It can be re-steep 3 - 5 times with traditional eastern style.
